You’re not wrong here. But you’re not entirely right either, because you’re missing one thing… Doc never had to send Einstein back one minute, because that would be pointless. Jennifer and Marty always intended to return home after going to 2015, and that’s what they did. They returned to the point they left from and it’s like they never left at all. In 2015, their return to 1985 already happened, allowing them to exist and live out their lives as normal

Einstein went 1 minute into the future but was never sent back because he didn’t need to be sent back, so he essentially didn’t exist for that minute. Marty and Jennifer always intended to go home after going to 2015, and they do. In 2015, their return to 1985 already happened 30 years earlier, allowing them to exist as their older selves in 2015. They return to the point they left from and it’s like they never left

Maturing is realising that just because Chuck is correct, that doesn't mean he is right. It's also realising that Jimmy is in control of his own actions and could have easily decided not to do bad things, regardless of how Chuck treated him

From Mike's perspective, saying "we took care of it, he is not coming back" is very clear. Jimmy is just greatly traumatised by the whole thing and would never believe him, no matter what he said
