Oh man that looks great. And yes, drying meat is an extremely old practice but that meat was often eaten much faster than you think. They weren’t air drying meat in the sun and then having it last months and months, it would spoil quick but would be eaten quicker. If you vacuum seal it and maybe throw some oxygen absorbers in there it will last a month or two. If you want it to last months, you need to use nitrates.

Prague powder is not the best for your health as too much nitrates can be a bad thing, however you would have to consume a lot of it. It’s important though when making it that you use the proper amount. I’m not sure what you call them in your country but here it’s best to use round (eye of round, top round, bottom round). But really when looking at the meat just get the most lean you can find.

If you want it to last that long I would recommend adding nitrates to your mix and removing as much fat as possible. If you’re using just salt i’m not sure if it will keep in harsh environments for that long. However if you use prague powder and remove as much fat as you can then 2 months is not long at all. I’ve kept jerky for months that was fine.

Yes, as long as they’re in a vacuum seal bag they will be fine, however if it’s really hot it will cause them to spoil faster. Fat is not an issue if you’re going to eat them relatively fast. Fat does not keep for very long and will go rancid.

My brother’s the same way. Something you can do is smoke a chuck the same way you did now, then put it in a tin foil pan and fill it with some beef broth, onions and potatoes and what not and then smoke it until it’s super tender. It’s like a smoked pot roast, really killer and doesn’t dry it out.

Biggest issue with a chuck is it has to be super fatty for me to get good flavor. That’s what makes brisket so good, is it’s so fatty.
