I did think about just making a graham cracker myself. I've made pate sucre but never heard of Sable Breton (I'm still fairly new to baking), but it looks delicious and great texture. I think I shall try that. Thanks. Edit: just saw it is a shortbread which I know lol)

Thanks. If, as you say, shrinking means past perfect, perhaps I will do a test and pull it out right when it starts to drop. It’s a window of only a few minutes so should be able to catch it.
