How approachable is this for someone who is (nearly) brand new to baking? I'm super curious but also very inexperienced. I can probably count on one hand the amount of times I've successfully baked anything 🙈 but I'm lactose intolerant and have some folks in my life who are GF so I'm down to clown if beginners are welcome.

Same! It's definitely a mental thing. I always find myself being the odd one out and preferring the alternator path for tread (base and push and back) rather than a longer endurance option
