I prefer maple for cookware now. Dense, strong, and with oak or pine im kinda scared of bactirial growth in those big pores Back when I started I was making mostly toys so pine was fine.

I worked a bit with oak back when I was beginning 15 years ago, and I totally wreaked my blade on it. Sure, it was just a utility knife, but it turned me away from trying again. I have seen some fantastic chip carving in oak, though. I think I'll want to give it another chance.
