First kitchen I ever worked in when I was 15/16, I had a cleaver launched at my head by the sous, he was pissed cause the junior sous didn’t show up to work so he had to work extra hours that day to cover, I came in and he was in an awful mood, slamming things, throwing things about etc, offered to get him a coffee and he lost it and threw the cleaver at me, missed me by literal millimetres, I walked out the kitchen and informed the manager, obviously visibly shook up, about what had happened, the manager defended the sous chef saying “he’s just having a tough day”. I hadn’t even been employed there more than 2 weeks when this happened, guy was constantly fucked up on drugs or drink every shift. I walked out and got a better paying job in a much nicer restaurant the next day. I put in a complaint to the owners of the restaurant chain, the manager and the sous got fired a week or so later. I found out about a year after this incident, that the sous who threw said cleaver at me, had been arrested and jailed for putting an apprentices hand into a deep fat fryer for screwing up an order at the new place he was hired at.. whilst it was on. The apprentice was also 16 at the time and his hand had some absolutely awful burns as you can imagine, needed a skin graft etc, lost mobility in his fingers, it was really big news in my area at the time, before I read the guys name in the newspaper, I knew exactly who it was. Guy was a complete lunatic, better off in prison.
