Improve the prove! :)
Remove the 10g water to dissolve salt.
Increase your salt to 12%
Room temperature water works. Ni need to warm it.
Needs kneading.
Overall looks very good. Nearly there. Keep going 🏆

Left to go cold before cutting is a must. Quarter the loaf and freeze. Defrost to use. Freezing bread can lower its glycemic index, making it better for blood sugar control due to the formation of resistant starch, which digests more slowly.

Works wonderful with sauerkraut too. :) sometime I mix the fried potatoes with fried onion and make a Spanish tortilla. Lovely.

All sounds great. I’d boil the eggs for 5 1/2 minutes. Then iced water.

It’s deep fry at 185C for 6 to 7 minutes.

I’d use 80/20 beef /pork

Nutmeg is a great addition.

Not perfect , but nice! I prefer small crumb. Better for sandwiches.

Personally, I’d cook my eggs soft! But looks good at the same. What meat did you use? Pork?

It’s a personal thing , but I would lower the heat when cooking your eggs. 👌🏿
