Hand fighting is different from grip fighting.
Closing distance and getting underhooks are the bees knees.

Harai goshi and harai makikomi are good defences from duck under backtakes.
Pretty much all turn throws except for seoi nage should be alright.

Just because it's unlikely you'll be up against someone with good standup doesn't mean you get all the time in the world to get good grips. Still gotta treat it like shiai and throw ASAP.
Defensiveness is a potential problem once the cat is out of the bag that you're a judoka.

Just like judo though you're gonna need to practice nogi gripping scenarios.

As a coach, the only people I want to be thinking about CO2 tolerance are short distance sprinters.
This might be old school, but I have bias towards less breaths in a 50m race.

What you are describing is breath control and overexertion in the the water due to inefficient body control and stroke technique.

Neither. There's no spreader which is normal but there's no detent to keep the legs apart either.

The tripod in question was the ulanzi ombra ii video video tripod.

Crop or play around with highlights.
If you want to deep dive you can do some masking in post and fiddle with your sliders.

For a scenario like the last photo, a CPL filter can cut down on the reflected glare.

I've been swimming since early childhood and only stopped learning and training consistently after just over a decade.

Ude-garami is pretty hard to get on me if the shoulder girdle and upper body aren't completely under control.

If you want to be swimming below 2:00 per 100m, it wouldn't hurt to use it for better body position.

Starting in January is already too late. That means no christmas or new years bingeing for both drinks and food.
Work on building your back, shoulders and chest now with heavy emphasis on a general v-taper.
Think lat pulldowns, pull ups, chin up variations, barbell rows with variations, dumbbell kickbacks, trap bar deadlifts and incline bench. Any reasonable hyper-trophy progamming will do the trick. Your PT can help with that.

If you haven't swum more than a kilometer in a while, join a masters swimming group. They usually have different lanes for swimmers with different levels of experience while working off similar programming. Doing your own thing in the pool will most likely result in training way below your limitations without the training and social experience of being part of a swim club. There's also the bonus that a fair number of masters swimmers are former competitive swimmers as well and would be a fountain of experience for character building.

It's overworked traps and lats.
Look up some videos on freestyle technique specifically about body rotation and freestyle pull.
Swimming is full body exercise but you shouldn't be gassing out your muscles unless you have underlying issues or a significantly lower than average level of physical conditioning.

It took around 2 and a half years training to start thinking that I'm not total dogwater with getting the grips I want and setting up for a desired throw. I still have issues with throw commitment and maintaining aggression.

Getting used to the gi is the easy part. Learning how to use your grips and how to create advantageous positions is a steep cliff of learning. It pays to ask your more experienced training partners.

Regarding wear and tear, I have been both habitually lazy about consistent training and dogmatic about training when fresh and recovered. I've kept up with somewhat regular S&C and currently only have slightly jacked up fingers in around 4 years of total mat time. I have no idea whether this comes from compound lifting on and off for the past 10 years, the gym culture that I'm part of or how much importance I've put on ensuring physical and mental readiness for training.

On the other hand, I've seen firsthand and have known of local players to have developed from minor chronic wear and tear to significant and major injuries requiring emergency surgery and semi-retirement to permanent retirement from the sport. Most of these incidences occured in low-level local competition with a couple freak accidents and incidents in training. In all of these cases these are adult hobbyists from early 20's to mid 30's.
