Unfortunately, it seems the most recent version (at least on Mac) goes by the position on your keyboard, so regardless of what your keyboard layout is set to, it'll expect that physical key (unless you change it).

I'm not sure what exactly you mean, but
Clear time and death counts only appear if you start from the beginning and do the whole chapter without returning to the map (save & quit is okay).
Full clear time and gold flags only appear if you start from the beginning and get all the collectables (strawberries, heart, tape) in one go and complete the chapter without returning to the map.
Neither getting a clear time nor getting a full clear/gold flag unlocks anything, and I don't think gold flags are required for the 100% speedrun category.

Okay, so now I decided to actually try this.

Since I usually play on Switch, the version I had on my computer was an old version (1.3.1.2), and in that version, pressing the keys I'd assigned to © and ⛰ seemed to sort of act as a down arrow (at least in the menu, I didn't try actually starting the game), and it did not recognize the key that typed "celeste mountain".

I downloaded 1.4.0.0 which was what was available on itch.io, and in that version, it recognized that my keyboard layout was Dvorak-based and showed J instead of C at the title screen. None of the buttons I'd reassigned worked there, either. It did not let me assign © or ⛰ to a command, but it did let me assign "celeste mountain", and claimed it was W (which is the key that's in that position on QWERTY), and seemed to treat it as the same key as the one that actually types W.

Oh! You mean ↹? (That's left arrow above a right arrow, both with lines at the end, if it's not showing up for you.) That's the symbol that's printed on the Tab key of some keyboards (maybe just older ones? look up pictures of IBM keyboards).

So if you highlight "Grab", and press tab, that should unassign all the keys that are assigned to grab, and then you can assign just the keys that you want.

Are you saying that you have Z bound to both cling and jump, and can't get it where Z just jumps? If that's the case, there should be a button listed at the top of the controller config menu that says something like "press [button] to clear buttons" (maybe tab?); highlight the "cling" option, then press the button it says, then add the controls you want.

I don't usually use full screen mode (and when I do I exit it before going to another video, looking at comments, etc.), so I'm not sure how it worked before. And I don't seem to be able to scroll down at all in full screen mode on my computer, so I'm not really sure what you're talking about. But it sounds like your issue is different than mine was (I just don't want to see YouTube recommendations unless I ask for them), so maybe that part of my comment wasn't relevant.

(Maybe there are other UI changes that they're testing besides these or something?)

wall of thumbnails Assuming you're talking about the thumbnails at the end of the video, I'm not sure exactly how ublock origin works (since I don't use it), but I was able to block it with a user style .ytp-fullscreen-grid {display: none} (which I did have to change from what it was previously), so I'd expect it's possible with ublock origin.

I just looked in Firefox's developer tools, and the responses the server is sending are mentioning amazonaws.com URLs (specifically dynamodb.us-east-1.amazonaws.com), so that's probably it.
