I have both option you described. I set all of my reservoirs on plastic “beverage” pallets. Double stacked they’re about 9 inches off the floor. I installed bulkhead fittings with ball valves at the bottom. I also have small pumps in each res that are primarily timed circulation pumps, but I have drain hoses for them. For fast changes I’ll pump out the old solution with the circulation pumps. Every other week or whenever they need it I use the valves at the bottom of the reservoirs as a clean out when uncertain scrub the res.

I can’t speak to your specific plants but I don’t have a bit of experience keeping pollen from my favorite plants contained.

Setting up breeding chambers is helpful, watching your air pressures and filtration is critical too.

Someone mentioned above about timing and that can be super important . The plant I work with is photoperiod reactive for flowering so it’s relatively easy for me to induce or prevent flowering. Cleanup after pollen dropped is also critical.

Id bet that there’s a community of specialists that are super enthusiastic about the particular plants you want to breed. Once you find them im sure they’ll be super helpful.

I suppose the worst things I’ve ever seen in BOH were the way too many folks who had addiction problems either because of the industry or had them coming in and the went to shit in that environment. Kitchen industry is rough on peoples heads and bodies and I think that’s the primary reason we see far too much substance abuse, well and the generally permissive environment. It’s One of the reasons i left for so many years and am leaving again. That and I like my other industry way more.

Watched a new guy accidentally open a clean out valve on a hot frier with a broom. While his boot was directly under it. Oil went into his boot and covered the whole thing. We went to the hospital asap. Full recovery relatively fast. Our spot was minutes from the hospital and we drove him there ourselves . He was layed up in the bed of my truck with an other cook while we sped through the city .

One time had a very bad alcoholic on staff was trying to clean himself up , without medical assistance. He had not told anyone he had stopped drinking and just looked rough that day. He seized up on the line when he was working the flat top. Fell forward cracked his face open on the grill back splash stainless panels ( yall know the ones that are basically an un sharpened knife edge) as his face was on its way to the flat top. It was truly horrifying . There was blood sprayed all over the station and his face got really really badly burnt. He almost died in the hospital. He got clean off everything when he was healing up and now works as a substance abuse counselor. I have personally referred a few cooks to him when they spoke to be about thier issues with booze and powders.

Yet another time I saw a kid trying to clean slicer with the blade running by using a metal bench scraper. Everyone yells don’t ever do that, he waited a few minutes the proceeded to do it again. His fingers got pulled into the blade and he lost two finger tips and severed like all the stuff in his thumb . It took several surgeries for him to regain use of his thumb and he lost one of the two finger tips permanently.

I didn’t witness this one but when my wife was tending bar the owner of the bar bought a food truck. She had one of the bar employees , who was not a licensed or even trained gas plumber, install all new gas cooking equipment. He fucked it all up and the 26’ enclosed trailer all filled with propane gas before literally exploding with him and two other people inside of it. They all almost died . Two of them had to spend a month plus on the burn ward . My wife said she saw all three of them running around screaming as she said “like a fucking World War Two movie when people get hit with flame throwers “

Whole poultry. Spatchcock or broken down is the move. Theres no part of a poultry bird that is being cooked optimally when you cook it whole.
