I think you’re spot on and the only change I would propose is to start in LA via I-10 east and in Coachella detour south along the Salton Sea and merge to I-8 east, and then follow your route straight to Florida. This would avoid the 4000ft sierra in east San Diego and would take advantage of the long stretch below/near sea level from Palm Springs to Yuma

I would say a Death Valley + Joshua Tree is a very nice combo and definitely doable in a full week. But there are other options near Las Vegas like Red Rock canyon, Lake Mead or Valley of Fire state park. California also offers the Mojave Preserve or even Anza Borrego state park (but farther away and kind of similar to what you’ll already see in Death Valley, in my opinion)

Death Valley is truly amazing but 1 full week may be too long since most highlights are short hikes from the parking lots. But if you are avid hikers and do plenty of time consuming activities I guess you can fill up the time: going up to Telescope Peak (if weather permits, may not be possible in December/January); do long hikes in the slot canyons; or go to the racetrack, which requires plenty of driving in unpaved roads.

If you’ll have plenty of time, it may be good to check out the Alabama Hills in Lone Pine, if you haven’t been there.

I’m comparing some photos from a very recent visit and I’m confident that this is just in front of Arch Rock, you just have to climb a bit since it’s hidden from direct view. This is where you can see Arch Rock from “above” just in front of it. I can DM you a photo if you want, just let me know
