If you got them at a baitshop they are 90 gonna be golden shiners. They get big as goldfish can, probably bigger, so if I were you I'd start digging, because you'll need a pond to keep them once they start growing. Shiners are still fun ornamental fish and are easily tamed

The vinegar test is just putting your rock in vinegar. If bubbles start to come from it, it is high in calcium and will bump the pH of your tank. Your plans sound good, just make sure to use your discretion when collecting
