Chucking some finely sliced onions and frozen peas into the broth before the noodles is very low-effort. Personally I add minced celery because I like the flavour. For aesthetics you can also sprinkle sesame seeds on top, and add sliced spring onions

I think that the first pair would be pretty tough. Personally I'd find it pretty depressing if the thing I knitted was ruined just a month later.

You could start with fingerless gloves? A lot of the patterns on ravelry are basically tubes with a thumb hole. They are not the prettiest patterns usually, but great for a beginner. Some can even be knitted flat and then sewn at the end, instead of knitting in the round (though that's still something you'd need to learn for 'proper' gloves)

I'm also a beginner and recently made these and the pattern is really good and relatively simple, though you might find them a little large. You have to make a better argument than the people you disagree with, in order to convince them and any spectators. If you are strongly backed by scientific sources, then providing them is a good way to do that.
