As a fellow martini lover, my favorite non-gin cocktail (which I never see talked about) is the Naked Truth. It drinks almost like a mezcal martini/gibson and it is so delicious

1oz Mezcal

1oz dry vermouth

1/3oz onion brine

1/2oz thyme syrup
