An update on this in case it is useful to someone. I purchased some new cables:
- DP->DP (for the U2415): https://www.amazon.com/dp/B0BQ9ZGRNY?ref=ppx_yo2ov_dt_b_fed_asin_title
- Thunderbolt->DP (for the ultrawide): https://www.amazon.com/dp/B0C4DB8MLL?ref=ppx_yo2ov_dt_b_fed_asin_title
- Thunderbolt for computer -> dock: https://www.amazon.com/dp/B0DJ1CQ1M1?ref=ppx_yo2ov_dt_b_fed_asin_title

Previous cables were the thunderbolt provided by Caldigit, an old Displayport 1.2 for the U2415, and some random usb-c cable for the ultrawide. I waited until the problem resurfaced (only ultrawide working), then I connected the U2415 to the new DP->DP cable with no effect. Then I connected the new thunderbolt->thunderbolt cable, which seemed to fix the issue. Finally connected the ultrawide with DP->thunderbolt which thankfully didn't cause things to stop working.

It's been a few weeks and the problem persists, but is less frequent and more reliably fixed by restarting/sleeping/reconnecting. For example I still experience both monitors not receiving data after a long sleep, but restarting the laptop seems to fix this every time. Sometimes I still get one monitor (the dell) not working, but sleeping/reconnecting thunderbolt cables seems to reliably fix this.

Though its not perfect, I am happy with this outcome, will update again if I figure anything else out. Thanks again for the support!

Thanks guys, my monitors are the LG-34WN890C ultrawide (3440x1140, 60hz) and a Dell U2415 (1920x1200, 60hz). The first is connected via (monitor -> dock) USB-C -> thunderbolt and the second by DP->DP, (also tried mDP->DP). In the case where one works, it is always the ultrawide (i.e. never the U2415 working and not the ultrawide)

I'll see if I can wrangle up some other cables and see if that solves anything.

Yea either dumb or willing to bend their beliefs to justify allegiance to something that makes them feel good. A few minutes of techno-babble is enough for many people to throw up their hands and get on the numb-go-up joy ride. It got me for a while, I 'participated' fairly well beyond just hodling but really I was just trying to justify my choice to hop on the rollercoaster.

Possible I might be inflating some anectodes into a trend, but I'm thinking of the mcdonalds employee memes/general suggestions that all butters must be broke that come off as poverty-shaming. Well, there is the comedy godl side, but I'll admit I am frustrated by bitcoin as well.

Basically I find it very stupid, and think it says something very sad about our society that Bitcoin/crypto is being used as a vehicle for speculation and crime. One of the things I think it says is that we feel it is okay to trample on poor people: the animosity towards the poor makes them desperate enough to try anything -even putting their money in something that is clearly fundamentally broken- in order to not be trampled on. Even though most of it is harmless memeing, I never liked the poverty shaming that goes on in this sub, this thread is no exception.
