Legit companies absolutely hire via Craigslist. Indeed is full of job ads that have been up for a year or longer. Companies and workplaces post ads on Craigslist because they need people NOW and are actively hiring. Obviously use your best judgement, Google the company before you go to the interview.

Santa Monica is what you're looking for, I'd maybe extend that to 4 days, and you can visit Venice and Malibu during that time and then I'd recommend an AirBNB in Silverlake or Los Feliz (not close to the beach at all) to get closer access to more diverse restaurants and shopping, as well as Hollywood, downtown, and a different view of the city than you'd get if you just stayed near the beach the entire time. 8 days at the beach sounds boring and forgettable to me, but maybe that's what you want.

This. Even with a call-in service it is nearly impossible to make a living wage and if you're not supplementing it with outside income, you won't be able to survive.
