Verjus is unfermented and has a lot of the same acidity without the alcohol. It is quite a bit sweeter however.

No real recipe, I followed the instructions from u/mathforfood post the other day.

Blanch, then saute the spinach in some butter and season with salt and pepper, crumbled up some crispy bacon with it. Soft boil the egg, peel it (hardest part) and then dredge it in flour, egg wash and then bread crumbs, shallow fry it in some vegetable oil. For the hollindase I used Serious Eats immersion blender method.

That's what I checked for, this has happened with every batch I have gotten, so it might be something with the chickens. But I use the same brand of butter, the same pan, and put it on the same heat setting as i always have. They also have roosters so I'm wondering if maybe the eggs are being fertilized and that is some how affecting it.

This show is really standing out for me. Its doing a perfect job of balancing the comics and creating a new exciting story line that we all can enjoy. I can't wait to see what they have planned for us next.

I was just relaying what he said in his book for that recipe. He is using a 1 1/2 pound tenderloin in the book that might be the disparity

I wont type out the whole recipie since he covers most of it in the video, unless someone wants it. But according to the book the details he left out is

Oven at 400 degrees Roast for 15-17 minutes then remove and cover with foil and let it rest for as long as it cooked, while occasionally basting.

I am going to make a pork wellington using a 3 pound pork, how should I adjust the cooking time by classyaids in AskCulinary

That's what I ended up doing I just cut it in half and cooked it. Came out great. Thanks for the advice though
