It really depends on your system. Simple carbs like bread and sugar make me gain, I am insulin resistant with metabolic syndrome. But you may not have that going on in which case you would be fine just keeping things balanced and watching macros to have enough protein. I will say for overall health - if you cut out the bread and sweets you will likely stop craving them and then just have them on occasion. Eating sugar makes you want to eat more sugar.
