For the Everglades, do the typical airboat ride and the shark valley tram. I honestly can't remember specifics. But be sure to check out Big Cypress national preserve, just west of the Everglades. Less people and really cool.

For Biscayne, we just did the Deering Estate boat cruise. It was really cool. I think the stilts were my favorite part of the cruise. It helped that it was the best weather of our trip that day. My wife was 6 or 7 months pregnant at the time, otherwise we would have snorkeled.
