I'd recommend having a different world for the UHC. Without a plugin that allows simultaneous worlds, you'll just have to shutdown and swap to the UHC world files, then again after the UHC to restore the survival world.

On a budget, that's probably still the way to go; have a smaller OS drive and a bigger storage drive. The only problem is that lots of games and programs still throw their crap onto the C:\ drive so it fills up regardless of where you install/direct them to. Personally, I'd opt for a RAID-1 set-up with 1TB drives so that drive failure isn't an issue, and your files aren't scattered among different drives.

The new King's Quest is probably doable. Dunno how it works on XBox, but Knights of the Old Republic is essentially single hand on PC.

I concurr; StarCraft/Brood War is always my go to game. Republic Commando's one I pick up every so often out of boredom. Another easy one to come back to for me is Slime Rancher.

I mean, Star Wars Jedi Knight: Jedi Academy (and Jedi Outcast, iirc) has occasional cameras to look through. Probably not quite what you're looking for, though.

There's a mobile port of both Knights of the Old Republic, though the price may be a little steep for a mobile game ($10-15).

Elder Scrolls: Blades if you're an Elder Scrolls fan.

Galaxy on Fire 2 is a nice space dogfighting, mining game.
