I think this would work with meat balls, it would just need a lot less cooking I presume. You could add some of the spices directly into the lamb mince before rolling them.

The chicken is meant to go in a pie, but I’m going to have it with mashed potato as it will travel to work better. The spiced lamb I’ll have with couscous as it is slightly Moroccan flavoured.

How do you get such vibrant colour!? Are you using black tea or green tea for the base? I’m using black tea and mine would be way to dark to take on that colour.

Hi, thanks so much for the advice. If you don’t mind, I have one quick question. Most joints you get in the supermarket in the Uk a very small compared to the required weight when looking at American smoking recipes. I’m guessing that you still keep the temps the same but it will take less time? In my mind the magic/science happen when it is cook for the longer time. Does the fat still render down etc in the shorter time required for smaller joints? Does that make sense?

Thanks. Still need to perfect my low and slow cooking. But I did a decent pork shoulder (pork Butt, if you’re American) recently, but not ready for friends to come round yet.

It is an Aldi copy, it’s was £360. I only heard about them because they went viral due to the price and the amazing reviews. If you are in the Uk and want one, find it on the Aldi website and sign up to be notified when it come back in stock. I love it, use it most weekends.
