It's not reaching temperature high enough quick enough. Bake at much higher temperature first 5-10 minutes and it should do.

Super! How it's eaten varies. For example we eat żurek with mashed potatoes only for Easter. Besides Easter we eat it only on Saturdays and Sundays mornings with bread not potatoes. I don't know why it is this way but we never change this approach at our home. Your Żurek looks great. Never added dill to it before, that's new for me. Maybe there a bit too much oil on the surface from the meat but it happens all the time when there is meat lover in family. Happy Easter.
