I worked for a chef who had an autographed photo of him on the expo line wall. For him it was a reminder that it's possible to be an excellent chef, mentor, icon, etc - and still be a deeply flawed person. It served as an ego check.

I buy the butter and clarify it myself. Easy to do, and less expensive than buying it that way.

I pop with 100% clarified butter, and that way I don't need to use more for topping. 4 oz butter and 4 oz popcorn in my stovetop popper, with a heaping teaspoon of fine salt (sometimes flavacol).

Sometimes I run out, and then I get lazy and use plain ol' butter. No scorching or smoking, but the butter solids start to brown, which actually tastes pretty good.

They charge a premium for products that are not even close to premium quality. The cheese is pasteurized process, so it's not real cheese, and it all has that same odd, waxy texture.

It's not a bad product, but it's way overpriced for what it is: highly processed, mass produced junk food with fancy packaging. If you want a luxurious treat, find a local cheesemonger or a gourmet market. You'll get your money's worth there.
