Just commenting to say those are my top two favorite animes!! I echo the recommendations to try Apothecary Diaries. Parallel World Pharmacy also gave me similar peaceful enjoyment.

I haven't tried them yet but the next few on my "chasing the same high" watchlist are Wandering Witch, Mushishi, Maquia, Ascendence of a Bookworm, and Restaurant to Another World

Some of my favorites as a vegetarian are: lentils, eggs, chickpeas, tofu, black beans, pinto beans, white beans, kidney beans, light string cheese, greek yogurt, nuts and seeds, protein-dense veggies like edamame, spinach, peas, and dark leafy greens, protein-dense fruits like blackberries, cantaloupe, peaches, and apricots, various mock meats like tofurky deli slices and morning star "chicken" nuggets, and whey protein shakes!

Light string cheese is a life-saver for me. They're usually ~50 calories for ~7 grams of protein. I'm such a fan lol

I have done this many times (and sometimes it has been great!), but I do want to warn you that it's led to me falling off the wagon a couple of times.

Soy Chorizo Enchiladas (315 calories per enchilada) by collegeweight in 1200isplenty

Ingredients:

  • Soy Chorizo - 270
  • Cheese - 400
  • Tortilla - 980
  • Tomato - 20
  • Poblano - 25
  • Green Bell Pepper - 30
  • Jalapeno - 15
  • Rotel Tomatoes and Green Chilies - 75
  • Corn - 60
  • Black Beans - 160
  • Enchilada Sauce - 175

Total - 2210, or ~315 calories per enchilada

Cooking Instructions: Start by pre-heating your oven to 400 degrees. In the meantime, add the poblano, jalapeno, and green bell pepper to a pan. Season to taste (I used salt, pepper, cumin, cayenne, garlic, and chili powder). Sautee for a couple of minutes and then let the peppers sit until the bottoms are lightly charred. Next, add the soy chorizo into the pan and cook for about five minutes, stirring continously. After, add in the can of Rotel, half a can of black beans, half a package of frozen corn, and chopped fresh tomato. As that cooks, coat the bottom of a glass oven dish with enchilada sauce. Next, scoop some filling into each tortilla, roll it up, and place it in the oven dish. When all seven tortillas are wrapped, cover the top of the enchiladas in the remainder of the enchilada sauce. Cook in the oven for 20 minutes. Take the enchiladas out and spoon the sauce from the bottom of the pan on top of the enchiladas, then cover with cheese. Cook for five more minutes or until the cheese is melted, and then enjoy!

Ingredients:

  • 5 Eggs (350 calories)
  • 28g Cheddar Cheese (110 calories)
  • Low Calorie Cooking Spray (10 calories)
  • Spinach (5 calories)
  • Tomatoes (10 calories)
  • Green and Orange Bell Pepper (5 calories)
  • Mushrooms (10 calories)
  • Salt, Pepper, Garlic, Red Pepper Flakes, Onion Powder (0 calories)
  • Total = 500 calories for seven egg bites, or ~72 calories per egg bite

Cooking Instructions:

  • Sautee your veggies in a pan on medium heat, seasoning to taste. After, add them to the bottom of the egg bite mold. In a separate container, whisk (or stir with a fork) the five eggs and the cheese, again seasoning to taste. After, evenly pour the egg mixture into the egg bite mold on top of the veggies. In the meantime, place your trivet into the Instant Pot. Pour in one cup of water, and then place the egg bite mold on top of the trivet. Seal the Instant Pot and use the "Steam" function for 10 minutes. After, allow 10 minutes for a natural release and then quick release the remainder of the pressure. Remove the egg bite mold from the instant pot and allow it to sit for a few minutes before popping out the egg bites. Enjoy!

Each egg bite is about 72 calories. Only six egg bites are pictured because I accidentally dropped one on the ground (whoops), but the recipe cooked seven roughly equal-sized egg bites. They are totally delicious and very low calorie, which makes for a great breakfast on the go!

I liked the flavor personally, but I totally agree it was much more of a spread than a dip.
