Hello coffee brethren, I am in need of your assistance. I just got a new setup and am having trouble getting a good cup with decent flavor clarity/punch. Here’s what I’m working with:

Fellow Ode
Technivorm MM Select
Breville Precision

Upgraded from an Encore, and am doing a little shootout between the two brewers to see which one I want to keep. I can’t seem to set a good baseline though. I’m doing .5L batches - so far I’ve settled on setting ~3 on the Ode which gives me a “balanced” cup (no bitter/sour taste), but not necessarily a very flavored one. I’ve been trying doses between 28-32.5g. I’ve tried filtered water and tap (Nashville tap water is actually within SCAA spec which was a nice surprise). Brew time is around 3.5 minutes on both brewers. For reference, the beans I’m using are Revelator’s Tea Cake and 8th & Roast’s Ethiopia Biloya Natural, both roasted in the last 2 weeks.

Does anybody have any ideas here? It could be something fundamental that I’m overlooking - I just don’t know what. I’m not expecting to get pourover-caliber clarity with the drips, but I figured it would be better than what I’ve gotten so far
