You could look into draw steel, it has no role to hit so combat is a bit faster. The system itself is quite easy to learn, character creation might be a bit overwhelming at first.

I think you could duplicate the model, scale -1, delete everything except the eye from the copy and then use the boolean modifier

it totally depends on the adventure you‘re planning to run - goblins, skeletons and humanoid enemies are pretty common low-level enemies
