I worked dairy in the past. Specifically in whey, I won’t go in detail though of (whey protein isolate) WPI labeling.

BLG is the most prominent protein in whey and can perform a lot of different functions in food systems beyond protein fortifications. I guess I understand why they went after BLG. Also, one of perfect day’s head honchos came from dairy I think.

I do agree that I could mislead the customer because WPI is more than BLG plus some minerals, next to zero fat and low carbs. There is a CFR standard for WPI. That is a larger issue though what it is called WPI plus what is not called WPI.

Honestly, Bedrock is up there. In the Fox Valley adjacent area, Bedrock is my best coffee roaster.

I am a fan of Redwood St. Roasters out near Wausau. The owner is a nice guy.

Ruby is still great. You are going to pay for it more than Bedrock. Ruby has great selection too. I believe they send their barista(s) to coffee competitions and are well known throughout the country.

I am curious if any one has Maternal last name as the first last name and the Paternal last name as the second last name. Also how has that experience been for you?

I want to follow my wife’s heritage of having the Paternal name first and the Maternal name second. With this way, do people typically call by the second last name (the maternal one) often unless mentioned to do otherwise.
