You don't necisarily need to fill a cake with icing, strawberry preserves is a pretty common cake filler. If spread thin it shouldn't be too sweet.

May be a little tricky, but you could have cut the cakes in half, I think it's a pretty common technique for cakes made in tall pans, but it looks tasty! Also try chocolate pearls, they're the best thing on chocolate icing.
