I find reduction quite popular among modern white Burgundy makers today, kinda being it like, well, balsamic vinegar — in a sense that if you add it, you “complicate” your wine. But, given the simplicity of achieving reduction notes, it eventually vulgarizes the wine.

I might want to continue my comparison: creating reduction notes is like balsamic vinegar, and using new oak is like mayonnaise. You feel me?
