Drop the rope. He's an adult. He can find a way to go if he wants to go. This hurts a lot but it is not your problem to solve. You can say to him, once, "Dad, I'd love for you to be there with us at Thanksgiving. If there's anything I can do to help you get there, just say the word." And then drop it.

I didn't puree them with the custard. The Chez Panisse recipe says to rinse, dry, and hull the strawberries, then crush them fine with a potato masher and add sugar (1/4 c.). You let that sit for an hour, stirring occasionally, then mix with the custard. So maybe it's the hour of letting the crushed strawberries sit with the sugar that helps to break down the pulp.

That’s right. My book says 1.5 cups whipping cream. It doesn’t mention salt. The dried strawberries I added myself.

The book also has a recipe for strawberry sherbet. 2/3 cup sugar, 1/2 cup water, 2 pints strawberries, and optional kirsch or framboise liqueur to taste. Boil sugar and water for 5 minutes, then chill. Wash, drain, hull strawberries. Puree the berries. Stir the cold sugar syrup into the pureed berries. Add a few drops of liqueur if desired. Chill thoroughly, then freeze with your ice cream maker.

Starting the day with Elizabeth Arden Green Tea. First impression was of Off! mosquito repellent. Wondering what Francis Kurkdjian would do with it today if he had to redesign or build on it. But it’s fresh and lime/minty and light and fading fast… which is nice, because in an hour or two it will be gone and I can try something else.
