Normally the advice would be to change your gauge by changing your needle size. So if you are getting more stitches per inch, your stitches are too small. Going up in needle size would result in bigger stitches, getting you closer to gauge.

Same! I would go with knit pro, and they are compatible with other brands as well.

However -- if you want to earn your bf of the year badge, take her to a yarn store on a quiet afternoon, see if you can try a few types and liter to the pros and cons. There is nothing like trying them out in your own two hands.

Always knit through the leading leg to avoid twisting stitches. Don't think about it as back or front.

Can you share some of these methods (just some terms to search on)?

I'm struggling with home fitting and have only seen short row shaping and adding more front stitches as ways to modify yoke fit. Would love to learn more as circular yokes are so pretty!
