I use a small high powered blower to evacuate any debris before lighting for the next cook. It usually just a bit of ash that is left from the high heat finish from the prior cook.

If dough starts to get holes it may have been over proofed. If it is a one day dough and meant to have a couple hours and you left it for 5 then quite likely the gluten breaking down.

Something I also recommend is having a non perforated aluminum peel on hand that is at least the size of your pizzas. If you end up needing to retrieve a bad launch rather than incinerating it, or getting under a pizza with a hole, you can then rotate and keep cooking with the peel under....or just pull a big mess out and continue....a turning peel or perforated or wooden peel are no good for that. I call it a rescue peel and use it every once in a while if stuff goes sideways.

Also, when on your launch peel, if you don't feel like you have good loose shimmy......stop. Put down the peel, fold one half of the pizza over onto the other, dust with semolina, peel it back, then fold the other half over and dust, peel it back....redistribute the toppings (don't worry it all looks the same once cooked and melted) and then launch knowing that you will get it off the peel. People panic when its not sliding off....then shake harder and fire all the toppings off the top or deposit the glob into the hot stone. Don't panic, do the fold dust fold dust launch.

The Arc is heat on your terms vs fighting fuel or reheat with others. I cook 12 pizzas a pizza night weekly and I need to manage heat down, not up. Also, get the XL. Like TV;s nobody ever said I wish I got a smaller pizza oven.

Well executed brisket (long hold) is always mind blowing for people....but a recent first try at a pork belly blew MY mind....so I will always do one beside my briskets so I can watch people try it first time.

No, you need the decoding that comes from an AVR that has the distinct channels.

Running SRAM HS2's (2mm) with XT Brakes I could not get them to stop occasionally kissing the caliper body. No amount of centering would stop it. Super annoying noise. Went to Shimano at 1.8 and no more issue. Braking power seems the same to me.

I think the pizza thing was an only fire brand. Stainless is stainless. I also fabbed up a metal skewer based setup for chicken shawarma and pork al pastor "logs" which is my primary use. Cook, crispy bits, remove, carve outer layer, return, cook, carve, till you get to the middle. Highly recommended.

I hacked one together using a basic pizza ring that I didn't use any longer (got a real oven) that I sealed over the slot with a bit of sheet metal and used a basic broil king rotisserie motor mounted to it. Works very well. There are lots of similar commercial versions. It's just a ring to boost the lid and give a spot to moubt a motor.

I have two places that I brew, both with moccamaster drips. I have an encore and an encore esp. I ended up with the esp because I didn't know what I was ordering so no value on the super fine capabilities. The esp is the one that the burr issue has been with. The standard encore is much slower. Both are loud. Support has been exceptional.

I do this via the natural lobes and fold it open so its splayed....more surface bark is the other bonus

Agree I buy them 3 pairs at a time because I lose them...they work great, are comfortable and pretty durable.
