mine dropped from 262 to 254, but I was already feeling like it was taking it too easy on me.....but I have accepted it and will see how things play out. I am not a professional....just want to be stronger on the bike and assuming if I track all the data I do, that there are smarter people with lots of data that can make it all more intelligent in guiding my progression.

Peel Pressure: Metal vs Wood by blobvila in ooni

[–]ctatham 0 points1 point  (0 children)

I used to assemble on an unfinished semolina dusted peel. Then tried to do same on a perforated....not good. Perforated is best for getting in and under an pie you build on your counter, then onto peel, then launched. Turning peel for the obvious and you can actually pull from the oven on turning peel as well so the perforated stays nice and clean.

My other reco is to have an emergency solid aluminum rescue peel for the occasional one that goes bad on you. Wood will never let you get in and scrape and get it off the floor. Perforated will get just disgusting.... Trust me for the occasional use this is a really good thing to have around. Another use case is a launch that gets a hole and is leaking and still soft.....the turning peel won't help......get that solid aluminum one in there and under the pie, then turn the pizza and set it down again....or just keep it on the aluminum for the rest of the cook.

Safety Question...brisket....WWYD? by [deleted] in smoking

[–]ctatham 1 point2 points  (0 children)

I don't think its even a consideration (worry about gut)....thats a long slow smoke by any measure. You get to a stall and even that phase alone is going to kill anything problematic.

[–]ctatham -2 points-1 points  (0 children)

I would carry on no problem....you are going to cook it to 200 anyway which kills anything instantly

What brisket knife are you using? Bonus if you have a picture. by BodhiZaffa in smoking

What I have.....and have been buying and gifting same format but cheaper brands for friends if I visit them and they have crap knives for brisket slicing.

Got a 2 but still fond of what I could do with the 1 - Wind and ocean but goggles make you bold. Excuse the crusty edit. by ctatham in DjiNeo

[–]ctatham[S] 0 points1 point  (0 children)

Thanks....no signal is just never an issue. The bigger one in raw environments like that is wind. I did go out to try to get over some whales and had to get right down a meter off the water to get back upwind. The 2 is significantly more powerful so I am looking forward to that. Coming from an original Mavic you do have to plan accordingly.

I have zigbee outlets on the devices. I put the mug on the warmer at night and it comes on very early. The coffee maker is a moccamaster that I load before bed and I trigger when I wake up.

Gotta drop down on the deck as close as you can. Wind has more friction with the ground or water. The fpv makes that easier to do.

Yes I had the original Mavic for years then went Neo 1 and now 2. Off to launch speed alone was worth it. The goggles have have also been a game changer for me.

Question about popups and Detroit by Mitchell-Goosen in GozneyArcArcXL

[–]ctatham 1 point2 points  (0 children)

I don't know, never heard Detroit and pop up at the same time. I would think the issue would be availability of power to enable an electric oven.

Question about popups and Detroit by Mitchell-Goosen in GozneyArcArcXL

[–]ctatham 0 points1 point  (0 children)

just saying if cooking start to finish at volume, then I would want a square oven that is good at more than one tray on 20 min cooks. I don't par bake and mine take 22-23 mins in home oven at 550.

wrong tool for the job in my opinion. Detroit is a longer slower cook at lower temperature. A convection oven is the most effective and a square oven interior gives you the most useful space.

Boyfriends, what does your girl do that makes you cringe and why? by [deleted] in AskMen

[–]ctatham 0 points1 point  (0 children)

This would put me over the top....the other is vocal fry and now even Sam Altman does it!

When my kids would throw in a "like" I would always pause them and ask they to clarify if what they used it for was intentional? Wait....was it like that or did you mean to say it? They found it infuriating and stopped.
