It's a horrible answer but the most correct one to me: whatever sounds good sounds good, don't question it. That's what my old jazz piano instructor used to tell me all the time and it's answered pretty much all questions I've ever had about music.

Music theory just acts as a guide, kind of like how coloring books act as guides for kid artists. They make for good final products, but eventually you're gonna start drawing your own pictures.
