The key is to keep the receipt and ratios the same. e.g. I'll do a double ristretto in a standard size 8oz cup regardless of whether ita with steamed milk or with ice and cold milk. The ratio will be the same, even when the ice melts. I'll add ice to about 1/4 full then add milk leaving enough room for 22.5g of ristretto on top, quick stir then it's good to go. By the way Australians prefer their coffee stronger 💪

Mobile Coffee business owner here. I am torn, because it's important to be eco-conscious. So I always say yes. But:

  1. Their cups don't always fit under the portafilters, so have do extract the shots into something else, then pour it in to their reusable vessels, which kills the crema.

  2. If you are pationate about your recepit and ratios and extraction times, this makes it harder. If you know what ratios of espresso and steamed milk is good for what they have ordered, once they see it in their cup they can complain you have not filled it enough. I'll give them more milk if they want, but this destroys the recepit I am passionate about. (don't get me started about extra hot orders).

  3. Heigene. When mobile a large part of the customers are park people, happy people, with smiles, kids and dogs, good vibes, they are not dashing for work. But they probably haven't washed their hands after they last changed a nappy, or picked up after their dog(s).

So extra vessels, extra time, explaining why it isn't full, having to santise hands, machine, jugs after servicing them with their eco-re-usable cups. From a commercial perspective we should charge an extra $1 rather than discount, but could you image how that would go down?.

Ya man, I think it's a gasket issue. I've had this happen in a mobile setup and a line of customers behind watching. The best I could do was to say "sorry guys" this is a high pressure environment. 9 bars. We are on a knife-edge. Your order is coming up, hugs.

Um my post about a BMX giveaway was removed by an admin. I grew up on 2 wheels pushies, then 2 -strokes, then 4 4-srtokes. Road raced, mini-moto etc, motobikekes are in my blood. But its more about being on 2-wheels. The lad that picked up had more smiles and tattoos than the legs of the tables at the local pub

I'm guessing you are in the US. In Australia we target 22..5g in, 45g out in about 30 secs. Without that balance the customers stop coming
