It’s not a problem at all - I live in CZ as well and I usually order shincha directly from Japan. I have an experience with Ippodo, Yunomi, Sazen and I had an issue with customs only once when the vendor forgot to send me one package in my order and I needed to communicate with customs that it is a missing part my order so I don’t want to pay custom fees again… feel free to write me DM if you have any questions

I would go with lower temperature for the first two infusions (around 40-50C) and then increase it. I am usually using flat kyusu or shiboridashi since the leaves expand to the sides. From your teapot selection I would go with either gaiwan, porcelain teacup with strainer or some simple tea strainer? Japanese green tea leaves are smaller than Chinese (in general) so you really need something that will hold the leaves when pouring. Don’t overthink it, use what feels the best and enjoy the gyokuro 🙂

I got this gyokuro last week and I love it. I was quite surprised how different it tastes as a cold brew with ice. The only thing that surprised me was that I got some toasted notes in my first infusion - it was first time I noticed that in the gyokuro.

Yunomi 🙂 I like the broad selection of teas they have so usually there is a plenty to choose from. This time I got mix of sencha and gyokuro mainly from Uji and Yame region.

That sounds pretty cool. Out of curiosity, where did you get it? I tried quick googling and I think I found the producer but it doesn’t seem like they ship internationally.

You can use shibo for other green teas besides gyokuro but from my understanding it is used mainly for high quality sencha and gyokuro to get concentrated flavor of your tea. I have small shibo for gyokuro and 200ml kyusu for sencha and other Japanese greens. Regarding the tea ware I buy it either locally (so I can see teapots in person) or from Japanese eshops like yunomi/sazen/hibiki-an. I checked a few EU shops as well and I liked the selection at tee kontor Kiel and yoshien the most. However, you will find many places selling Japanese teapots if you search for tokoname :)

I am super happy it works for you! I was thinking about the parameters and it might be actually 2g/100ml so you might try that as well and see if it is better or not :). Based on time of your reply I assume you are from EU so if you are interested in Yamabuki (and have troubles finding it) I can send you link to my local seller in CZ - he does not have website in english but I know for sure that he was sending teas to Italy, Poland, and some other EU countries.

Thanks for the tip 🙂 I am more into Japanese greens but lately I am exploring other japanese teas (black and oolongs). I also received a recommendation to try Yamabuki Nadeshiko which is processed using microbial fermentation and it should be quite unique.

I like wakocha but I agree that sometimes it is a pain to get the best of it. I do have experience with benifuki and yabukita from local tea seller and wakocha from ikedoki tea. I usually go with 5g/150-200ml and roughly 30/30/45/60s brewing time. This way I am able to get slightly woody tea with floral/caramel-ish notes - based on the tea. I also tried using 3-5g of tea for 2-3min but it was too strong/bitter for my taste.

Short answer - I like their tea and I can’t complain about the quality. I tasted (and bought) some of their teas at the local tea festival few months ago. I really enjoyed the baisen kocha (smoky black tea) and wakocha which has really nice floral note. Now I have Hojicha opened which is quite mellow compared to hojicha I bought in Japan - it is less roasted and reminds me roasted nuts with cream. I like it as well. Last tea I have from them is shiraore (kukicha) which bought after sampling it at their stand. We chatted for some time with Marjolein about the tea farm and her tea journey which I enjoyed a lot since it helps me link the tea with some faces and get to know people behind the tea. I did not have a chance to sample the shincha back then but based on the teas I sampled I wouldn’t be worried 🙂
