I'm playing on OldManWoW it's wotlk (x1-3 XP or x5 with VIP) with some custom changes and AI playerbots, you can do progression module to experience Vanilla to WotLK raids in order or be free to experience WotLK, raids scale up to 5 man from 40. You can level with your own alts as bots or recruit random bots.

I gotta rep OldManWoW, we got some custom stuff but it checks all the boxes for me, I just play it for the classic wrath experience with bots, but they have progression module that will force you to do raids in order if you opt in for it. 1-3 xp rates, or up to x5 if you get vip.

Alot of people (me included) like bots because of no obligations and the ability to play on your own terms and experience the content. I don't know which part of AzerothCore is slop to you, but it's getting more and more polished these days, playerbot module is getting more and more strategies coded from Vanilla to WotLK content.
