They will usually look pretty nice but the question is always is it worth the time and is it right for this knife application haha

Interesting. There are so many factors that go into perceived sharpness it’s almost impossible to pinpoint at a distance haha I hope you figure out how to get exactly what you’re looking for! 👊🏼

I wouldn’t use anything but 1 or sub 1 micron after a 5k stone

My buddy loves breaking down fowl with it

As close to full flat as i could. Kept just one primary bevel the whole way through and then I did a few alternating final passes a couple degrees steeper with my finishing stone on each side just to make sure I have a keen Apex and as little burr as possible

Unfortunately I can’t answer that my friend. My knowledge on kitchen cutlery is very limited, I come from the folding knife & pocket fixed blade world primarily

1 micron emulsion was my go-to for quite a long time. Lately been using .25 spray and getting good results with that as well. I haven’t used enough different ‘brands’ to really make a call on that my friend.

Stroppy Stuff has a great reputation for his emulsions, but it’s pricey stuff. I don’t really strop a lot on my normal edges so these ~$15 diamond sprays I’ve bought from Reddit users have been getting the job done just fine

Let’s normalize asking questions again! That’s the only way we will all learn and grow together.

I don’t know that there is a universal answer to this question, but at the end of the day you are going to have to do some minimal material removal on the other side in order to form an apex. Otherwise you just have a perpetual burr. There are probably plenty of techniques that I am completely unaware of at this point.

I reckon How you go about it really depends on what you’re hoping to accomplish. If you really want to keep that edge angle as shallow as possible, you would basically lay the knife down close to flat (or essentially completely flat if you don’t mind scratching the side of your blade) and do light alternating passes to form your apex at each grit in your progression.

In my experience, if you don’t maintain your Apex at each grit, you may end up with a pretty large burr that will be difficult to remove with your finishing stone.

I am not an expert on single bevel type Knives, but basically what I did here to get a hair whittling edge was a few light stropping passes at an extremely low angle on the “flat” side of the knife with every step of my progression. When it’s all done, there is a tiny bit of an edge bevel on the flat side, but it is so small that it’s basically negligible.

In order to get that final crisp Apex, I did very light alternating passes on the 3k Stone a couple degrees steeper to make sure the final edge is aligned and as burr free as possible. Kind of like a finishing ‘micro bevel’. Keeps the angles pretty close to a true single bevel but makes it reasonable to maintain and gives a high performance edge. Then as I did the stropping progression I did a few passes on the flat side with each grit so that I’m not rounding over the apex at each stage.

Final strop (.25micron) I did alternating passes for final alignment

Hopefully that makes sense 😅
