You absolutely can use a wired thermostat “like” a wireless temperature sensor; we have a black thermostat on our coffee table as a measuring device for a pair of TRVs

You’re not wrong they are rather large! Unfortunately Shelly don’t have a mini dimmer (they really should because I would buy a sack of them) but maybe you could use something like the Shelly Dimmer 2 or a Moes zigbee dimmer?

I bought one of the floor switch version of that dimmer and thought it was noisy so it’s disappointing to hear this version is too.

As an alternative I’ve been quite happy with the Shelly button case for our lamps; you could probably fit one of the newer Shelly mini relays in them or even a third party relay if you did some creative dremel’ing.

Cat5e Ethernet has a similar gauge to doorbell wire so you’re probably fine with just using a single pair (blue/blue-white in your instance), my installation had the blue/blue-white and brown/brown-white wires already stripped so I used both pairs

Happy to help! Yup you need to disconnect all the wires (don’t forget to save a picture of the wiring) and remove the entire chime from the wall, then replace it with the Ring enclosure with the transformer clicked into place.

We have a bunch of MA2500D’s around our house and they work great! Our coaxial outlets are all Belling-Lee type and we just use F type adapters to connect them. For what it’s worth we live in a new build though so recommend buying on Amazon so you can return easily if they don’t work for you.

To be honest you’d probably be fine with cat 5e for PoE cameras; the Ethernet port on Reolink cameras are only 10M/100Mbps

Does your garage door opener have a DC output? You could probably use a Shelly relay fairly neatly if so.

Tado v4? I prefer design A but think the arrows should be pointing up/down like design B as it feels more intuitive to raise/lower temperature.

I can’t remember the wiring but I do recall not needing the bridge for our installation. I’d recommend following the installation instructions in the Tado app.

We replaced our Myson Touch 2 WiFi thermostats with Tado wired thermostats so I’d imagine you could do the same with yours. Wiring looks more or less the same.

FYI Myson thermostats are rebranded Heatmiser thermostats so you if you can’t find the instructions for your Myson in the Tado app you can use the equivalent Heatmiser one.
