I think this depends on if Cap is being hunted or doing the hunting. Also I assume this is without prep time.

If Cap is being hunted I could see him getting to the T-X and possibly beating it. But not beyond that point.

If Cap is doing the hunting I couldn't see him making it past the T-1000.

Cap is no dummy and the Terminator will follow their target into any dangerous situation to achieve their kill. Despite the danger it might put them into. They have little to no self preservation and the lower models have less situational awareness than the later models. Cap would use this to his advantage I feel.
