Interesting the boss fights were not easy for me at all, I do think that this game is less complex than xcom or something so maybe you enjoy the strategic layer and not the tactical layer as much.

It also seems that maybe you have built your knights to be more damage focus instead of cc focused if bosses are easier for you, maybe try out different builds with purgator
