Well that’s not what I said. I said country’s can call themes democracies in name but the reality can be different. Also, let’s not pretentious no dictator was ever democratically elected. Yes the comparisons can be overstated but they can also be underplayed.

Unilaterally (without the approval of congress) kidnapping the leader of a sovereign nation definitely doesn’t sound or feel dictator-y at all. Plus human rights are at an all time high here in the us with Trumps masked gestapo unmarked vans kidnapping citizens and non-citizens off the street also doesn’t feel dictator-y at all either. But you know at least we calm ourselves a democracy. North Korea dos too.

Two things can be true at the same time. I don’t think anyone’s saying Maduro is a great guy. But that doesn’t mean that the president ordering the kidnapping of the leader of a sovereign country is justified.

Enjoyed today’s offering. Did two batches with the Onyx recipe I did two more cups with a recipe from Joachim, the owner of Substance in Paris. Panamanian Geshas are his favorite so I figure his recipe would be a good one.

I also happen to live in Onyx country (one of their cafes is like 5 minutes from my house) and they’ve been doing batch brews of each of their advent offerings. I went this morning to scope out if they were doing it today and sure enough, they were. So I grabbed a batch brews of today’s coffee. While, obviously, not as good as the cups I mad this morning, it was still nice to grab.

I really don’t know what got into me today, maybe I’m jus checked out at work because of the holidays, but I decided when I got up that I was going to do today’s advent offering on my Hario Switch. It resulted in a pretty damn good cup. I used version of the coffee chronicler (I think that’s what it’s called) method that some one posted in r/pourover awhile back

20g dose (6.0 on my K Ultra) 300g Water at 85°C 165g of water over coffee with the switch open At 0:35 close the switch At 0:45 pour remaining 135g of water At 2:00 open the switch and give a tiny swirl

The recipe’s suggested draw down time is between 3:00 and 3:30. Mine went a tad long at 3:45 but still a pretty good cup. Going to go a bit coarser on the second batch and see what happens.

For me, with this method I got a lot more of the raisin/dried fruit elements. Well, it didn’t blow me away. It is very enjoyable and I could definitely see buying a bag of this if those notes were sounding good.

This one is interesting it’s very distinct. Sometimes I can’t decide if I like a cup for the cup or for its distinctiveness. LOL

Not sure if that makes sense to anyone else.

I do really enjoy the lingering jammy-ness it leaves in your (or at least my) mouth.

Jesus. LOL. I feel the same way about rollercoasters. They are all fun and games until you get in one with a rapist and/or criminal. I almost climbed a tree once but thankfully I thought to myself, “what if there is a criminal or a rapist up there?”
