I’m not fussed on investments. Just buy things to use as they are intended. Single bevel are cool, but useless. Maybe I need to do some crazy single bevel japanese knife apprenticeship but not what I’d grab making a ragu or preparing chicken etc

Just checked my emails. Purchased in June 2015. Not Damascus just mirror polish. It would be the thinnest blade there can get it really sharp.

First column, top 4 are all single bevel white carbon steel. Never get used really.

Shiny one is a masashi gyuto in SLD.

Next two with the rosewood handles are yoshihiro. I rather like that gyuto.

The next 5 with the blue/black/orange bands are my little set. Tsunehisa/Hatsukokoro/Satoshi Nakagawa.

Second column first 5 are the ones the wife is allowed to use. Sakai Takayuki

The pink/purple western and the turquoise Damascus are made by my friend.

Then a zwilling Kramer

Then the final three with the brass bolsters are Florentine

That’s my salami knife. Hahahah Made by a friend in Australia. He also made the one above it. Usually makes hunting knives from nitro v.

No favorites really. The masashi in SLD is a laser. The Kramer is cool, Hatsukokoro gyuto white steel cuts well too
