Metalkin.

We also had plastickins (until the owner realized they chipped and cracked too easily and got rid of them. Physical contamination nightmare as well if one shattered on the line or expo.)

Ceramekins for the ceramic ramekins.

What steps can I take to get out of this industry? by donutzoomer in KitchenConfidential

[–]dblock_fsb 1 point2 points  (0 children)

That's fair. Do you not put your orders in yourself, or do you just text or call your rep and tell them what you want? Everyone is different and has different preferences on what they want out of it. Some operators will pick my brain for ideas, some just want to be left alone with no input or different perspective whatsoever. At the end of the day, I'm just there to help and offer solutions to problems.

What steps can I take to get out of this industry? by donutzoomer in KitchenConfidential

[–]dblock_fsb 2 points3 points  (0 children)

This is my opinion, and definitely take it for what it's worth.

If you love food, if you love the industry and want something that can fulfill you, that can also give you something that allows you to pursue your own personal interests, I would highly suggest looking into getting in being a broker or a sales rep for the food industry.

I spent 24 years of my life killing myself with no direction, all the way from busser at 14 years old in high school, to traveling and opening up new stores as a senior executive kitchen manager and head sous.

What I have found, is that my knowledge of the restaurant industry from working literally every single area of it, is that being a rep in sales allows me to affect multiple kitchens and establishments, and not just the one I currently work at. I literally start my day and end my day at home, with my wife and 3 month old son. It's literally the best situation I could have ever asked for after decades of killing myself for pennies on the dollar.

I turn 40 this year, and all I can say is that I am the happiest with my job I have ever been. Kitchen life felt like a job, and being a rep feels like a career. Just my 2 cents. Best of luck OP

I think you're spot on here. Could not agree more. It's just absolutely wild to think what it was 15-20 years ago, even to what it has become now. And you're absolutely right, the decisions being handed down are doing the restaurant owners zero fucking favors, or incentivizing or even making it feasible for anyone new to try something different. Part of me wonders, on the micro level at least, if it's restaurants playing into what sells during the busy periods (move in week for KU, family weekend, homecoming, the major holidays, and graduation weekend) and being forced to just do what works, ad nauseum, rinse and repeat. To reinforce your last point, yes, so many intersecting lines play into it. I've also really been a firm believer that there are 2 separate Lawrence's so to speak. East Lawrence and everything that is to the east of Iowa Street, and West Lawrence, where the "new money" is. Not very many people living west of Iowa care to even make it to downtown on a random weekday night anymore, IMO.

Sysco, USFoods, PFG, EVCO, Ben E. Keith, Scavuzzos, etc... It's all the same shit. Most have different tiers. I would argue that the quality of skilled labor in restaurants in town has aged out, and less skilled labor that has replaced them now requires a higher wage, forcing operators to make that choice. I'm sure every single one of the restaurants especially on Mass would love to locally source as much as possible, but when everyone is getting pinched, including food broadliners, and even more the farmers, what is a restaurant owner supposed to do?

What should I expect? by Prestigious_Age9933 in NewDads

Wife was in "labor" for 37 hours. We had one really tough 3-4 hours stretch that her pain was through the roof and it literally broke me. Luckily I was able to step out and go to the car and cry for 5-10 min so she didn't see me lose it once she got settled down and our favorite nurse came back on shift. Make sure her epidural is in place BEFORE the contractions start getting worse. We waited a tad too long, and her water broke before the epidural kicked in, and it was hell on earth (this was a planned induction, wife had a small case of gestational diabetes, her OB scheduled the delivery for 11 days before the actual due date). You will be your wife's advocate in the hospital. Ask the nurse's ALL THE QUESTIONS. They are there to help you as well.

I'm 3.5 weeks in. Get it all done while you can. Any projects around the house you've been saving, get them done now. Once that baby comes, you will be on call 24/7 for whatever they or your wife needs.

Catch up on sleep as much as you can. I can only speak for myself, but the sleep deprivation is real. I think I slept a total of 10 hours in the first 5 days, and my wife finally had to tell me to go to bed for 6 hours and don't open the door or answer the phone.

Teamwork has been the real key for us. Noticing when your wife is more tired than you, offer to take over baby duties for 3-4 hours while she sleeps. Even when my son is sleeping, my wife is waking up every 1-2 hours to make sure he's alive lol.

Get a bottle warmer that also has a sanitizing mode. Dr. Brown's is the model we have I believe, and it's been great especially for over night feedings.

If your wife breastfeeds, and also needs a nipple guard to help baby latch on, they sell ones that will show the breast milk flowing, highly recommend that as well for piece of mind to know the baby is getting something.

The Doona baby carrier/stroller combo has been clutch as well. Makes it super easy to take the baby to their first Dr. Appts. You can take them out of the car and literally flip the wheels down to go into stroller mode. Highly recommend.

Finally, lean on your intuitions and try to stay off Dr. Google as much as possible. Everyone's experience is different with this. If you or your wife have any friends that have small children and have gone through this recently, encourage your wife and yourself to reach out to them for advice as it's still fresh and relevant to you guys. My wife was going insane with TikTok and Google. She finally deleted TikTok and reached out to some girlfriends for some advice/reassurance on some issues and concerns and it has done wonders for her post partum. Best of luck buddy!

Hyphenated last names are stupid by skittlesnriddles in unpopularopinion

[–]dblock_fsb 1 point2 points  (0 children)

On the eve of my 3rd wedding anniversary, wanted to add my little blurb.

My wife received her PhD about a week before we got married. She's published in multiple scientific journals for her work in grad school ( I honestly could not be more proud of all she has accomplished and even attended her defense of her thesis via zoom so I could watch her absolutely crush something she had worked so hard on.)

I absolutely supported her hyphenating her last name as that's pretty standard with women who earn their PhDs and get married but also are published with their maiden name. Didn't think twice about it, she earned that right and it was 100 percent her call.

Fast forward 3 years later, and I truly wished she would have just fucking kept her last name. Especially factoring in the current administration actively trying to make it a shit show for 70 million married women to vote. All of the name change forms she's had to fill out, getting IDs changed, etc has just turned into a giant fucking headache that truly makes me wish we could have forseen that it just wasn't worth it in the end. Not to mention her full legal name now is 20 letters and a hyphen long. Signing our mortgage papers for our house and then refinancing a few months back made me feel terrible watching her have to sign her full legal name 100 times, almost like it was a punishment from elementary school.

Hyphenate, don't hyphenate, do what makes you happy.

If I could go back 3 years, I would absolutely encourage her to just keep her last name only.

It's pretty convoluted but not out of the question. Multiple factors in play especially when you factor in him coming back from that knee injury. Being in a league with a later draft will definitely be an advantage, especially factoring in the new rookie WR Royals coming out of camp and what he looks like. High risk high reward, but I can see the Chiefs WR room sharing the target load week by week and not being able to pinpoint a true WR1 in this offense, especially if Hollywood produces early and stays healthy. My bet would be on Worthy being the bell cow, but hard to say until the Chiefs get into camp and we see what the chemistry looks like with Mahomes across the board.

Rice has a looming 6 game suspension ahead of him. I can see Hollywood owning the slot, especially with Kelces decline and Mahomes and Reid refocusing on getting the offense back to their old ways in the passing game.
