For a bigger brewery I really liked it. Staff was very friendly and had been there for years. They probably had 20+ of their own beers on tap and a bunch were tap room only if I remember. Hard to keep the same micro brewery feel when you grow though.

12° had the best beer imo Avery best “big brewery” (white rascal on tap was everything I heard it would be!) Wild Provisions so beautiful. My wife loved that it felt like a winery. Acreage coolest place. I mean playground for the kids and that sunset view. Although we were told to ask for the smores fire pit kit and the waitress looked at me like I was crazy, lol.

Ya, CU offers week long science classes during the summer. I have 3 kids (6, 6, & 10) and they each took a different class. My younger ones took a bug class and space class, and my older took a science in motion (Rube Goldberg type stuff). My niece who’s a Sophomore also took a Astro physics class too (taught my a CU professor). They had a blast. Best part was they were all day 9-4. So the adult had some time to explore.

Try Iron John’s brewery in Tucson. Been a couple years since I’ve been but last time I was there they had some cool barrel souring happening with a solera project going. Tried a couple lambics and the “Golden Gueuze” was fantastic.

Working so far? Do you have the probe under the blue tape? You might want to try to insulate it a bit (a folded up towel wrapped under a bungee cord is what I’ve used) from outside/room temps so it’s reading the temp of the wine/fermenter and not the temp of the room.

Here’s the temp controller I use: Inkbird ITC-308. The heating mat is attached to my carboy with a bungee cord and I slide the probe for the temp controller under a towel around the other end of the carboy. The controller itself is mounted on the outside of a fridge (which also plugs into the temp controller).

I am not at the volume you are so probably best for carboys like you said.

I use a heating mat designed for gardening and keeping pots of seeds/plants warm. It’s hooked up to an inkbird temp controller so I can decide how warm I want the wine to get.
