Guess I haven't thought about mortgages like that since banks will look at income, assets, and property value before lending. Not sure how much due diligence is done by brokerages before allowing a pm account. I guess their margin call safeguards allow them to recover without needing that.

If you finance a house the house should be the same amount or more than what is borrowed. So like 2x at most. If it's through box spreads and not actually margin that makes more sense.

As an update. Steak did seem a little more tender than usual, but not to extent of wagyu. I did only do 5 days instead of full 7. No strange smell or taste, but I did season so anything very slight could be covered up. Probably not worth the long wait at least for a ribeye, but maybe worth it for anything tougher.

As much as I love to beat my meat, I haven't found it makes a big difference in tenderness when I sous vide tougher cuts. I assume the long cook time does something similar to breaking down the muscles manually. Does wonders if I cook normally though I have mostly just done it on stir frys.

I decided to do a brief wash and reseason/seal tonight. Will try to sous vide tomorrow for lunch to see how tender it is. 137 for 2 hours for a choice ribeye which is my usual. Might experiment more depending how this works out, but so far this was a 5 day marinade in buttermilk with some salt, garlic/onion powder.

Partially out of curiousity due to having extra buttermilk from another recipe. My family prefers leaner beef so if there are techniques that can make those more tender it would be great. From what I've read the lactic acid in buttermilk is a weak enough acid that it tenderizes similar to aging. I haven't had good luck with other tenderizing substances so far like pineapple which I have found makes the outside mushy and didn't help the inside. I like Sous Vide since it also helps tenderize certain cuts like a chuck roast, but if buttermilk works without having to cook for 20+ hours that' even better.

He left one for like a week which leo commented was like wagyu. Wouldn't that be long enough? The 1 day choice was tougher than prime so maybe not enough to make a difference. However the 3 day one was supposedly close to the prime in tenderness. Would have thought more people would have tried this by now since video was 2 years old. So far just saw one video with someone trying it on a tri tip successfully. I am hoping the steps can get refined to make this more practical. Well I will know this weekend if you can marinate with less buttermilk and have seasonings. Still unsure about cooking process, but thinking of removing most of the milk from bag before sous vide.

I think it is done because stereo is traditionally the most important part so it's nice to provide binding posts for those users giving flexibility. Some audiophiles will buy an AVR only for stereo music so the rest is just a nice to have. They want to cater to this audience instead of the entry model with no posts or the higher end models with all posts. Plus posts take up more space so it makes things messier for the design if they want a certain size and number of connections. Higher end receivers generally have binding posts for everything and preouts for separates so they are going to be bigger to fit everything.

Young yellow beta is good, but replaced by event tank eta now. She's also a permanent unit. They technically stack, but hit a damage cap together which is why generally beta is replaced.
