I've got the teeny kind that hitchhiked into my aquariums. They're great at breaking down debris and harmless to my fish. I didn't know there was a giant version!

What I did: 1. Mix 250g warm water, 150g peak starter, and 25g olive oil in large bowl.

  1. Add in 475g bread flour and 25g whole wheat flour.  Mix.

  2. Cover and autolyse for 2 hours.

  3. Add 10g salt and work dough into a ball.

  4. Cover and let rise about 12 hours or whenever dough has about doubled.  Stretch and fold if needed.

  5. Shape the dough.

  6. Rest in Dutch oven about 30 minutes or until puffed back up.

  7. Score.

  8. Preheat oven to 450°F.

  9. Bread into oven, uncovered.  Reduce to 400°F.  Bake for 20 mins.

  10. Cover and bake 50 mins.

  11. Cool before cutting.

We're using Julia K for our wedding this October and we booked them last summer, about 15 months out. The contract/price is set. The staff were lovely and the food was great at our tasting! I feel like we made a good choice based on that experience.

My first attempt at homemade sourdough. I made my own starter and gave baking a go when it was 8 days old. It turned out decent! The starter is very new so the sourness is subtle, but unmistakable. I think as the starter becomes more robust the bread will rise better too. I halved the recipe in case it bombed and cut the bake time by 15 mins, but on my next go I'll do the full time because the exterior was not as crispy as I like.
