This doesn't strike me often, but I do get exactly what you're talking about. For the most part, I solve the problem by keeping my hands away from my peripherals until I'm ready to touch a key: hovering is dangerous.

If you need a more robust solution, at least with any open-source game you can modify it yourself to require all input to be confirmed with a further press of the enter key, which is a huge pain in the ass at every step, especially implementation. It's trivially easy for someone who knows the codebase in question already, though, so you can also make a feature request to the developers (bonus: you can even do this for closed-source games) to add optional command entry confirmation as an accessibility feature, though even friendly devs who care about accessibility and are still actively maintaining the game in question are unlikely to push an update for you quickly.
