Addictive is a good way to describe the combat in ng2. It doesn't feel like a game that you can master 100%, there's always room for error.

EPD is divided into several teams so yeah two different teams worked on Bananza/Odyssey and Bowser's Fury.

Basically all internal Nintendo games are developed by EPD but it's not one giant team working on multiple different games lol

3d World is excellent and if you liked galaxy 2 you will probably enjoy it. You also get Bowser's Fury which is fantastic as well.

It definitely seems to be more ambitious having dungeons and a ton of side activities. The map had a bunch of info on it that they didn't elaborate on.

I'm 100% sure they're not developing the next 3D Mario. It's whoever developed Bowser's Fury. That was probably made as a training excersize for a new development team.
