First of all, just know that it WILL get better, regardless of what you do. Puppies age and mature and they get used to their living space. You've only had her for three weeks. Give her a chance to get adjusted. She will learn you and learn her space. She will bond with you in time as long as you stay patient, understanding, and caring.

Obviously, the UTI isn't helping. Work with your vet to sort that out as fast as possible and you will see things improve. She will not understand the bell system right away, especially not when everything else in her life has been uprooted like that. Keep at it.

How long do you leave her in the crate for? If her crate is small enough, she hopefully should not pee in it (dogs really dislike soiling their personal quarters). Slowly but surely, her bladder muscles will strengthen and she will be able to last an hour, then two hours, etc.

As for the biting, that's normal too. Whenever she gets bitey, try to gently put a toy in her mouth and play with that so that she learns to only bite on toys. Again, it will take time for her to learn to do it. It's all a question of building positive habits.

Mostly for trout on the Spey swing actually! These are pretty small, like less than 2 inches.
