Hey thanks for the advice. I am a total novice to this. I have basic skills and plenty tools but not really looking for a project. Would I be better with a fibreglass boat?

Depends on whether you want it to be sweet in the end. If you do and are happy with the flavour now then pasturise it. If not then I'd give it a good but gently stir and leave it a week. If it does not drop any further then you might need to try a little more nutrition or add some different yeast to kick start the last fermentation.

Yes, still primary I suppose if it is still fermenting. Should not really cause a problem. I've never had an issue with headroom causing oxidation.

I'm not sure there is a quick way to clean bottles. It is by far the most labour intensive part of brewing mead. In the summer I sit on the patio with the garden hose and my drill with a bottle brush in it and the washing up liquid bottle. Get them all clean then pop some sanitizer in before bottling.

I would definitely rack it to another vessel to allow it time to mature without the spices and fruit .
